I do a version of this with the addition of ube. Bake the sweet potato (ube) until its basically pure sugar. Chop up a pineapple, add the ube the pineapple and condensed coconut milk to blender with a bit of sugar and some vanilla. Blend, add more coconut milk to get it to just beyond paste liquidity.
